Tropical fruit surprise

Today I made some cakes as a house warming present for my friends Ben & Rachel.  To make the cakes I started with a normal sponge recipe (100g each of butter, sugar, flour & 2 eggs with vanilla essence we grated the butter as it's quicker). To make them surprising we put in white chocolate and apricot jam.

Once they were baked we made some icing using icing sugar and tropical fruit juice. We took a big spoonful of icing and let the blob of icing drip and then the icing flows smoothly and then drizzled backwards and forwards.
